USMEF senior vice president Joel Haggard said over the last three decades, the market has evolved into a very high quality market.

“We have a high percentage of chilled beef going there.  The most preferred item is a very expensive item, boneless chilled short ribs.  The retail price on that is more than most of our middle meats.  So, incredible demand there, they have the ability to pay.  The consumer knowledge of beef has really grown, and so we really look forward to that market growing even more.”

Haggard noted that pork enjoyed a very solid January, thanks to growing demand from China.
