Not only is the number of organic acreage increasing nationwide, but the sales of those organic products continue to move higher as well.

"Fruits and vegetables, I mean these numbers, even after years of growth, we're still seeing between the last two censuses; 2012 and our most recent numbers in 2017; the sector doubling to over $3 billion."

The USDA's Catherine Greene is with the Economic Research Service. She said organic dairy numbers have doubled to $1.5 billion in the past five years, while organic poultry  has increased five fold during that same time period.

"Grains and oil seeds, it's still kind of small, but it did double in that period. Same thing for most of the other sectors that are smaller. The only sector that has had only a very modest amount of growth was beef cattle, beef cattle and other cattle are still the tiniest sector."
